SHORI

Arguably some of the best food ever cooked at SPARK was served at SHORI, a progressive Japanese street food and restaurant unit. SHORI means 'Victory' in Japanese, which was the surname of Danny Victory, the founder and chef patron of the business. Danny began his journey working in Michelin star kitchens, crafting his art under the stewardship of some incredibly talented chefs such as Michael Caines, Andrew Pern and Michael O’Hare, before eventually pursuing the dream of opening his own business at just 24. Danny first opened at SPARK on the ground floor in a small kiosk unit under the name Chow, focusing on colourful warming stir-fry options, ramen and bao buns. It wasn’t too long before Chow was renamed and Shori was born, and it relocated to a 40ft unit upstairs at SPARK*. Danny took this concept to its permanent home, which now trades at 21 Grape Lane, York under the new name of IZAKAYA - a very special Japanese restaurant and cocktail bar.
