Originally inspired by the American vegan food explosion, Damian and Robyn, the creators of the brand, developed their unique style of cooking while touring UK food festivals and then settled down just across the pennines in Manchester. Spark is their first location in York. Their menu is full of original recipes, including harissa corn ribs and mushroom cheesesteak fries. Gluten-free options also available.

How did you get the idea for your business?

In 2016 we had an ambition to start our own business and we were exploring several options. Being foodies & Vegan, the street food route was appealing as it incorporated our values and passion.

What's the first thing you did to bring that idea to life?

We booked a stall at a Vegan food fair in Manchester, we were living in London at the time and it was a long way to travel for the day. Our initial investment was £900 which included equipment and the stall fee. We sold out in 2 hours.

What's the best part of running your own business? What's the hardest?

Creating and growing a vision that we completely believe in is about as rewarding as it gets. There are many challenges with starting a small business and these change over time. It can be a lonely experience sometimes.

What would you say to someone considering starting their own business?

Make sure you believe in your idea, give it 100%, enjoy it as much as possible and if it doesn't work out then you've still gained valuable experience.
