The Vega Galindo family joined us back in October 2019! They have a family culinary history, with father, Mauricio having been a chef around the world. When moving to York, the family established their own street food business, capturing their delicious native, Colombian food and allowing the people of York to try that and such a cuisine for the first time. From a pub residency in the Bay Horse in York, they reached out to SPARK* to explore opening their first, more permanent street food stall in October 2019 – Tricolor! Their exciting menu allowed them to develop the dishes and flavours that they wanted people to experience – from empanadas, arepas and plantain. Their popularity at SPARK rapidly grew, and they become a firm fixture and favourite of our community. In the Summer of 2022, Tricolor had the opportunity to realise a dream by opening up their first ever restaurant, and so they did, in August 2022.
